This creamy, cheesy pasta is a comforting and indulgent dish perfect for any night of the week. With a rich cheese sauce and tender pasta, it’s a crowd-pleaser that’s easy to make.
Ingredients
- 12 oz (340 g) pasta (penne, fettuccine, or your choice)
- 2 tbsp butter
- 2 cloves garlic, minced
- 2 tbsp all-purpose flour
- 1 cup (240 ml) heavy cream
- 1 cup (240 ml) whole milk
- 1 cup (100 g) grated Parmesan cheese
- 1 cup (100 g) shredded mozzarella cheese
- Salt and black pepper to taste
- 1/4 tsp crushed red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Cook Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
- Make the Sauce: In a large skillet or saucepan, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute until fragrant.
- Create a Roux: Sprinkle the flour over the melted butter and garlic. Stir constantly for about 1-2 minutes to form a roux. This will help thicken the sauce.
- Add Cream and Milk: Slowly whisk in the heavy cream and milk, ensuring there are no lumps. Continue to whisk and cook until the mixture begins to thicken, about 3-4 minutes.
- Add Cheese: Reduce the heat to low and gradually add the Parmesan and mozzarella cheeses, stirring constantly until the cheese is fully melted and the sauce is smooth.
- Season: Season the sauce with salt, black pepper, and crushed red pepper flakes if using. Adjust seasoning to taste.
- Combine Pasta and Sauce: Add the cooked pasta to the cheese sauce, tossing to coat the pasta evenly.
- Serve: Garnish with chopped fresh parsley if desired. Serve hot and enjoy!
