CHICKEN LASAGNA ROLL UPS

Chicken Lasagna Roll Ups are a delicious twist on traditional lasagna. Tender pasta is rolled around a creamy, cheesy chicken filling and topped with marinara sauce and melted cheese. Perfect for a comforting family meal or a special occasion!

Ingredients

  • 12 lasagna noodles
  • 2 cups cooked chicken, shredded
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 egg
  • 1 cup spinach, chopped
  • 1 cup marinara sauce
  • 2 cloves garlic, minced
  • 1 tsp dried Italian herbs
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat Oven:
  • Preheat your oven to 375°F (190°C).
  1. Prepare Noodles:
  • Cook lasagna noodles according to package instructions until al dente. Drain and lay them flat on a parchment-lined baking sheet to prevent sticking.
  1. Make Filling:
  • In a large bowl, combine shredded chicken, ricotta cheese, 1/2 cup of mozzarella cheese, Parmesan cheese, egg, chopped spinach, minced garlic, Italian herbs, salt, and pepper. Mix well until all ingredients are combined.
  1. Assemble Roll Ups:
  • Spread a thin layer of the chicken mixture onto each lasagna noodle.
  • Roll up each noodle tightly, starting from one end.
  1. Prepare Baking Dish:
  • Spread a thin layer of marinara sauce on the bottom of a baking dish.
  1. Arrange Roll Ups:
  • Place the rolled-up noodles seam-side down in the prepared baking dish.
  1. Add Sauce and Cheese:
  • Pour the remaining marinara sauce over the roll-ups.
  • Sprinkle the remaining 1/2 cup of mozzarella cheese on top.
  1. Bake:
  • Cover with aluminum foil and bake for 25 minutes.
  • Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  1. Garnish and Serve:
  • Remove from the oven and let cool slightly. Garnish with fresh basil or parsley, if desired.
  • Serve warm and enjoy!
